How to make this cranberry mocktail recipe:
- Step 1: Simmer the ginger slices with water and sugar in a small pot for about 10 minutes. Then turn off the heat and let cool.
- Step 2: Zest an orange and mix with the sugar. After zesting, juice the orange and set aside for the cocktail.
- Step 3: Rub a piece of orange around the edge of your glass. If making the cranberry garnish, rub the orange over a few cranberries as well.

Ingredients
For the ginger simple syrup:
- 1 cup plus 1 tablespoon sugar
- 1 cup water
- 1 inch piece of fresh ginger, cut into slices
For the cranberry mocktail:
- 1 orange
- 1 tablespoon sugar
- 2 ounces cranberry juice
- 1 ounce orange juice
- 1 ounce aquafaba (liquid from a can of chickpeas)
- 1 ounce ginger simple syrup
- 2-3 ounces seltzer
- 3-4 fresh cranberries (optional garnish)

Instructions
- Make the simple syrup. Combine the sugar, water, and ginger slices in a small pot. Bring to a boil, lower the heat, and simmer for about 5 minutes. Turn off the heat and let sit to cool and infuse.
