With cheddar, sharp mustard, sweet marmalade, and thinly sliced apple, this goat cheese grilled cheese is everything you'd want from a grown-up comfort meal.

I have to admit that I often find goat cheese to be too much. It tends to overpower my taste buds and is just too intense. But, when balanced with other flavors, I've found it can be pretty damn delicious. And balance is the goal of this grilled cheese.

In this sandwich, I've combined goat cheese with cheddar for a more approachable cheesiness. Then I paired it with mustard and marmalade, which helps to mellow it out without masking its distinctive flavor. The result is one of the best grilled cheeses I've ever made.

😍 Why you'll love this grilled cheese

  1. It's creamy and gooey. The creaminess comes from the goat cheese, while the gooeyness is thanks to cheddar.
  2. Great for those who may not love goat cheese. And that includes me. It's just really well-balanced, thanks to all of the complementary flavors.
  3. Makes for a special grilled cheese. If you're bored of your usual grilled cheese, this is a good way to change it up.

Ingredients

Here's everything you need to make this grilled cheese sandwich.

  • Sourdough bread: My go-to bread of choice, but you can use whatever you enjoy.
  • Mayo: I like to use mayo on the outside of my grilled cheese. It helps brown the bread more evenly than butter, which can burn.
  • Whole-grain mustard: I like a mustard with texture and flavor here, though Dijon mustard would also do the trick.
  • Marmalade: I use my grapefruit and orange marmalade in this grilled cheese. The bright citrus flavor complements the goat cheese rather well. Orange, lemon, or any other marmalade is fine.
  • Goat cheese: The key ingredient and star of the sandwich. I love Vermont Creamery's goat cheeses, as they're fresh and local to me. I'm enjoying their new flavors and made this sandwich with their clover blossom honey cheese. But any fresh goat cheese is fine for this recipe.
  • Cheddar cheese: I know this is a goat cheese grilled cheese, but I use half goat and half cheddar. The cheddar gives it that classic melty, gooey cheese pull. Use a cheddar you enjoy. For me, that's a sharp cheddar from Cabot Creamery.
  • Apple: Adding a few slices of apple to each sandwich adds a welcome bit of crunch. Any crisp apple will work. Or, you can feel free to leave it out if you prefer.

  • Pear: Try adding a sliced pear instead of an apple
  • Butter: Use softened butter in place of the mayo
  • With meat: Add a couple of slices of prosciutto or smoked turkey

How to make goat cheese grilled cheese.

  1. Step 1: Lightly coat one side of each of the four slices of bread with mayo.

  1. Step 2: Flip the bread over and spread the mustard on two slices and the marmalade on the other two.

  1. Step 3: Slice the cheddar cheese and crumble the goat cheese. Add cheddar to two slices and goat cheese to the other two.

  1. Step 4: Add sliced apple to two slices.

  1. Step 5: Place the sandwiches in a pan over medium-low heat. Cook for about 5 minutes or until browned to your liking.

  1. Step 6: Flip the sandwiches, partially cover the pan, and continue cooking for another 5 minutes, or until golden brown.

Description

Ingredients

  • 4 slices sourdough bread
  • 2 tablespoons mayo
  • 2 tablespoons whole grain mustard
  • 2 tablespoons orange marmalade
  • 4 ounces cheddar cheese
  • 4 ounces goat cheese
  • 1 apple, sliced (optional)

Instructions

  1. Lightly spread mayo on one side of each bread slice. Flip the slices over and spread mustard on two slices and marmalade on the other two.
  2. Layer the cheddar onto the mustard slices and crumble the goat cheese onto the marmalade slices. Top the goat cheese with the apple slices.
  3. Press a mustard-cheddar slice together with a marmalade-goat cheese slice, mayo side out, to form two sandwiches.
  4. Heat a nonstick skillet over medium-low heat. Add the sandwiches, partially cover the pan, and cook for 5 minutes until the underside is golden brown. Flip, partially cover again, and cook for another 5 minutes.
  5. Cut in half and serve.
