Here's how to make apple and rhubarb chutney.
- Step 1: Slice the rhubarb into ½ inch pieces. Peel and roughly chop the apple and onion.
- Step 2: Peel and finely chop the ginger. You want about a tablespoon. Then, zest the orange.
- Step 3: Add the cumin, cinnamon, cloves, and red pepper flakes to a pan and toast for a minute or two over low heat until fragrant.
- Step 4: Add the ginger to the pan,

- Step 6: and the maple syrup.
- Step 7: Simmer for a couple of minutes, increasing the heat to medium-low.

- You can freeze chopped rhubarb to make this in the fall or winter when fresh rhubarb isn't available. Just put chopped rhubarb in freezer bags or an airtight container and add to the pan when cooking the chutney as described in the recipe. You may need to add a few extra minutes to the cooking time.

- 1 apple
- ½ onion
- 3 stalks rhubarb
- 1-inch piece of fresh ginger
- 1 orange
- 1 teaspoon cumin
- 1 teaspoon cinnamon
- ¼ teaspoon ground cloves
- ¼ teaspoon crushed red pepper
- ⅓ cup apple cider vinegar
- ⅓ cup maple syrup
- ⅓ cup raisins
Instructions
- Prep the ingredients. Peel and core the apple, then chop it, along with the onion, and rhubarb. Peel the ginger, then finely chop or grate it. You want at least a tablespoon. Zest the orange.
- Start the chutney. In a medium pan, toast the cumin, cinnamon, cloves, and red pepper overlow heat until for about 2 minutes. Then add the vinegar, maple syrup, and ginger. Turn up the heat to medium-low and cook for another minute. Add the apple, onion, rhubarb, raisins, and orange zest.
- Cook. Gently simmer the chutney for 12-15 minutes until everything has softened. Sitr occassionally. Allow to cool briefly before serving or storing in an airtight container in the fridge.
