Description
This mint julep mocktail is made with maple syrup, apple cider vinegar, vanilla, and a generous handful of fresh mint. Complex, refreshing, and ready in minutes.

- 2-3 sprigs of fresh mint
- 1 ounce apple cider vinegar
- 1/2 ounce maple syrup
- 1/4 teaspoon vanilla extract
- crushed ice
- 4-6 ounces club soda
Instructions
- Place 1-2 sprigs of mint in the bottom of a glass. Use a muddler or the bottom of a heavy wooden spoon to lightly bruise the leaves.
- Add the apple cider vinegar, maple syrup, and vanilla extract. Stir to combine.
- Fill the glass with ice and top off with club soda. Gently stir it again to incorporate.
- Whack another sprig of mint over the glass to release its oils, stick it into the glass as a garnish, and serve the mint mocktail with a straw.

A gentle, brief muddle is all the mint needs to release its oils and flavor.
