Instant Pot Red Cabbage and Apples

Description

This instant pot red cabbage and apples recipe is a fast vegetable side dish that will bring color and flavor to your meals all winter long. 


Ingredients

Units Scale
  • 1 medium red cabbage (about 1 1/2 pounds)
  • 1 onion
  • 4 juniper berries (optional)
  • 1 cup broth (whatever kind you prefer)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon kosher salt
  • 2 apples
  • 1 tablespoon brown sugar
  • 1 tablespoon butter
  • 1/4 cup chopped walnuts

Instructions

Halve the cabbage and remove the core. Roughly cut into large chunks. Remove the skin and slice the onion. Crush the juniper berries with the back of your knife.

Add the cabbage, onion, and juniper berries into the Instant Pot along with the broth, vinegar, and salt. Secure the lid on the pot and make sure the pressure release valve is seat to sealing. Press the manual button and set the time for 8 minutes. While the cabbage cooks, peel and cut the apples into quarters and then each quarter into thin slices. 

If you're not in a hurry or busy making another dish, you can let the pressure release naturally on the pot. But if you want it sooner, go ahead and release it when you're ready. 

Drain the liquid off the cabbage and transfer it to a serving dish with a slotted spoon. Press the saute function on the Instant Pot and add the butter. When melted, add the apples and brown sugar. Cook for about 4-5 minutes until the apples are softened.

Spoon the apples over the cabbage and top with the chopped walnuts. Serve warm.

Notes

If you don't have juniper berries, just leave them out. You could substitute a cinnamon stick and remove it after cooking or a little grated nutmeg would also be nice. 

This dish would be great topped with a little chopped parsley.

The brown sugar is not essential, so feel free to also leave this out if you don't want added sugar.
