Description
A sweet and tangy rhubarb and apple chutney with raisins, onions, and warm spices—perfect with grilled pork chops or roasted meats.

- 1 apple
- 1/2 onion
- 3 stalks rhubarb
- 1-inch piece of fresh ginger
- 1 orange
- 1 teaspoon cumin
- 1 teaspoon cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon crushed red pepper
- 1/3 cup apple cider vinegar
- 1/3 cup maple syrup
- 1/3 cup raisins
Instructions
- Prep the ingredients. Peel and core the apple, then chop it, along with the onion, and rhubarb. Peel the ginger, then finely chop or grate it. You want at least a tablespoon. Zest the orange.
- Start the chutney. In a medium pan, toast the cumin, cinnamon, cloves, and red pepper overlow heat until for about 2 minutes. Then add the vinegar, maple syrup, and ginger. Turn up the heat to medium-low and cook for another minute. Add the apple, onion, rhubarb, raisins, and orange zest.
- Cook. Gently simmer the chutney for 12-15 minutes until everything has softened. Sitr occassionally. Allow to cool briefly before serving or storing in an airtight container in the fridge.
