Rhubarb and Apple Chutney

Description

A sweet and tangy rhubarb and apple chutney with raisins, onions, and warm spices—perfect with grilled pork chops or roasted meats.


Ingredients

  • 1 apple
  • 1/2 onion
  • 3 stalks rhubarb
  • 1-inch piece of fresh ginger
  • 1 orange
  • 1 teaspoon cumin
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon crushed red pepper
  • 1/3 cup apple cider vinegar
  • 1/3 cup maple syrup
  • 1/3 cup raisins

Instructions

  1. Prep the ingredients. Peel and core the apple, then chop it, along with the onion, and rhubarb. Peel the ginger, then finely chop or grate it. You want at least a tablespoon. Zest the orange.
  2. Start the chutney. In a medium pan, toast the cumin, cinnamon, cloves, and red pepper overlow heat until for about 2 minutes. Then add the vinegar, maple syrup, and ginger. Turn up the heat to medium-low and cook for another minute. Add the apple, onion, rhubarb, raisins, and orange zest.
  3.  Cook. Gently simmer the chutney for 12-15 minutes until everything has softened. Sitr occassionally. Allow to cool briefly before serving or storing in an airtight container in the fridge.
