Maple Glazed Carrots

Description

These glazed carrots make a quick stovetop side dish using Vermont maple syrup and hard cider. Try them with orange juice, white wine, or beer, too!


Ingredients

Units Scale
  • 1 lb carrots
  • 2 tablespoons butter
  • 1/8 of kosher salt
  • 1/3 cup hard cider
  • 1/3 cup raisins
  • 2 tablespoons maple syrup
  • 2 tablespoons chopped parsley

Instructions

Peel and slice the carrots roughly 1/4 inch thick coins or match sticks.

Melt the butter in a small pan over medium heat. Add the carrots, salt, cider, and raisins. Bring to a boil. Reduce the heat to low and cover, keeping it to a simmer.

Cook for 12-15 minutes or until the liquid is almost all absorbed and the carrots are tender but still crisp.

Remove the cover, add the maple syrup, stir, and cook another 2 minutes. Top with the chopped parsley.
