Description
This delicata pizza is a delightful combination of earthy sage, savory squash, creamy ricotta cheese and crispy bacon. It's the perfect pizza for fall.

- 1 medium delicata squash
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 5 slices of bacon
- 1 large batch of pizza dough, about 20 ounces
- 1 cup ricotta cheese
- 2 tablespoons chopped fresh sage leaves
- 1 tablespoon honey
- 2 tablespoons balsamic vinegar
Instructions
- Preheat the oven to 425 degrees F and put a pizza stone or baking sheet in the oven to heat.
- Prepare the squash. Slice the delicata in half, scoop out the seeds, and cut each half into thin slices. Toss the squash with a tablespoon of olive oil and 1/2 teaspoon of salt. Lay the squash in a single layer on a baking sheet. On a second sheet, place the slices of bacon. Put both sheets in the oven and cook the bacon for about 15 minutes, or until crispy, and the squash for about 20 minutes, or until tender.
- Meanwhile, prep the dough. Roll the pizza dough out on a large piece of parchment paper with a little flour, if sticky, until it is about 14 inches wide. Turn the oven up to 450 degrees.
- Assemble and bake the pizza. Spread the ricotta across the pizza dough. Arrange the squash slices on top. Sprinkle over the sage leaves and parmesan cheese. Drizzle over a tablespoon of olive oil and a sprinkle of salt. Carefully transfer the pizza and the parchment paper to the preheated pizza stone or baking sheet. Bake for 15-20 minutes until the crust is golden and crispy.
- Finish the pizza and serve. Crumble up the bacon and sprinkle over the pizza. Drizzle the honey and balsamic vinegar over the top. Slice and serve.
Notes
The thickness of your pizza crust will determine how long it takes to cook, so adjust the baking time as needed.
If you like a little heat, sprinkle red pepper flakes over the pizza before serving.
